
- 12 oz gemelli noodles
- 2 avocados, diced
- ½ cup grape tomatoes, sliced
- ½ cup feta cheese
Pesto
- 2 cups fresh basil
- ½ cup olive oil
- ⅓ cup pine nuts
- ½ cup parmesan cheese
- ½ tsp salt
- ½ tsp black pepper
Cook noodles as directed. Strain and let cool. Combine all pesto ingredients. Mix into cooled noodles, stirring well. Add remaining ingredients and gently mix together. Serve chilled and enjoy!
